Preparation
- Preheat your oven to 180°C (350°F).
- Season the pork shoulder or loin generously with salt and pepper.
- In a large oven-proof skillet or roasting pan, heat the olive oil over medium-high heat. Add the pork and sear it on all sides until golden brown.
- Remove the pork from the skillet and set it aside. In the same skillet, add the chopped onions and minced garlic, and sauté until soft and aromatic.
- Pour in the beef or vegetable broth to deglaze the pan, scraping up any browned bits from the bottom. Return the pork to the skillet and add thyme, rosemary, bay leaves, and apple cider vinegar.
Cooking
- Cover the skillet with a lid or aluminum foil and place it in the preheated oven. Roast for about 2 to 2.5 hours, or until the pork reaches an internal temperature of 70°C (160°F).
- Once cooked, remove the pork from the oven and let it rest for at least 15 minutes before slicing.
Notes
Consider marinating the pork overnight for added flavor. You can also add vegetables like carrots and potatoes to the roasting pan for a complete meal.
