Vegetable Ingredients
  • 2 lbs mixed vegetables (green beans, carrots, bell peppers) Choose vegetables that roast in similar times for even cooking.
  • 2-3 tbsp olive oil To coat the vegetables.
  • to taste salt
  • to taste pepper
  • 1 tbsp lemon juice To brighten the flavors.
  • fresh herbs (parsley or basil), chopped For tossing after roasting.

Method
 

Preparation
  1. Wash and chop all vegetables into bite-sized pieces.
  2. In a large bowl, toss the vegetables with olive oil, salt, pepper, and lemon juice.
  3. Preheat the oven to 400°F (200°C).
Roasting
  1. Spread the vegetables on a baking sheet in a single layer.
  2. Roast in the oven for about 20-25 minutes or until tender and slightly caramelized.
  3. Remove from the oven and toss with fresh herbs before serving.

Notes

Pat vegetables dry after washing for better roasting. Cut vegetables uniformly for even cooking. For a charred effect, slice peppers thinner.
