  • 2 cups mashed potatoes Use day-old mashed potatoes for a firmer bake.
  • 1 cup shredded cheese For extra cheese, mix in an additional 1/2 cup.
  • 1 cup cooked sausage or bacon, chopped You can replace with cooked ham, leftover roast, or smoked salmon.
  • 1 cup chopped onions Cook until soft for milder flavor.
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.25 cup fresh herbs (chives or parsley), chopped Try rosemary or thyme for a different flavor.
  • 1 tbsp butter for topping Dot the top with butter before baking.

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine the mashed potatoes, cheese, cooked sausage or bacon, onions, salt, pepper, and herbs.
  3. Spread the mixture into a greased baking dish.
  4. Dot the top with butter.
Baking
  1. Bake for 30–35 minutes or until the top is golden brown and bubbly.
Serving
  1. Serve hot, reminiscing about family visits. Spoon onto plates and add a green salad or steamed vegetables on the side.

Notes

Refrigerate leftovers in an airtight container for up to 3 days. Reheat in a 350°F (175°C) oven, approximately 15–20 minutes, or in the microwave until hot.
