Ingredients
  

For the beef and broth
  • 2 pounds beef chuck roast
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon thyme
For the noodles and sauce
  • 8 ounces egg noodles
  • 1 cup sour cream Greek yogurt can be used as a substitute.
  • 2 tablespoons cornstarch Optional, for thickening.

Preparation
  1. Place the beef chuck roast in the slow cooker.
  2. Add the chopped onion, minced garlic, beef broth, Worcestershire sauce, salt, pepper, and thyme on top of the beef.
  3. Cover the slow cooker and cook on low for 8 hours or until the beef is super tender.
Final Steps
  1. Once cooked, carefully remove the beef, shred it into bite-sized pieces, and return it to the slow cooker.
  2. Add the egg noodles and cook on high for an additional 30 minutes until the noodles are tender.
  3. Stir in the sour cream and mix cornstarch with a little water before adding it for a thicker sauce, if desired.
  4. Serve warm and enjoy!

Notes

For better results, bring ingredients to room temperature before cooking. You can prep the ingredients the night before and pop them into the slow cooker in the morning. Avoid using lean cuts of beef for best texture.
