- Heat the olive oil in a skillet over medium heat.
- Add the brisket and sear on all sides until golden brown (about 3-4 minutes per side).
- Once browned, transfer the brisket to the slow cooker.
- In the same skillet, add the sliced onions and minced garlic. Cook until softened, about 5-7 minutes.
- In the skillet, pour in balsamic vinegar, beef broth, brown sugar, Worcestershire sauce, salt, and pepper. Stir well to combine, bringing it to a gentle simmer.
- Carefully pour the onion mixture over the brisket in the slow cooker.
Cooking
- Cover and cook on low for 8-10 hours (or high for 4-6 hours), until the brisket is tender and easily pulls apart with a fork.
- Once cooked, remove the brisket and allow it to rest for about 10-15 minutes before slicing.
- Serve with the rich gravy from the slow cooker, garnished with fresh thyme if desired.
