  • 4 pounds beef brisket Make sure it is at room temperature before cooking.
  • 2 tablespoons olive oil For searing the brisket.
  • 2 large onions, sliced Preferably yellow or sweet onions.
  • 4 cloves garlic, minced For aromatic flavor.
  • 1 cup balsamic vinegar For sweetness and tang.
  • 1 cup beef broth Adds depth of flavor.
  • 2 tablespoons brown sugar To balance acidity.
  • 1 tablespoon Worcestershire sauce For umami flavor.

  • Fresh thyme for garnish Optional but recommended.

Preparation
  1. Heat the olive oil in a skillet over medium heat.
  2. Add the brisket and sear on all sides until golden brown (about 3-4 minutes per side).
  3. Once browned, transfer the brisket to the slow cooker.
  4. In the same skillet, add the sliced onions and minced garlic. Cook until softened, about 5-7 minutes.
  5. In the skillet, pour in balsamic vinegar, beef broth, brown sugar, Worcestershire sauce, salt, and pepper. Stir well to combine, bringing it to a gentle simmer.
  6. Carefully pour the onion mixture over the brisket in the slow cooker.
Cooking
  1. Cover and cook on low for 8-10 hours (or high for 4-6 hours), until the brisket is tender and easily pulls apart with a fork.
  2. Once cooked, remove the brisket and allow it to rest for about 10-15 minutes before slicing.
  3. Serve with the rich gravy from the slow cooker, garnished with fresh thyme if desired.

Notes

You can prep your ingredients the night before and keep them in the refrigerator for easy assembly in the morning. For variations, consider using jackfruit for a vegan option.
