  • 1 cup unsalted butter, softened 2 sticks
  • 1 cup creamy peanut butter or crunchy for texture
  • 1 cup packed light brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon pure vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon fine sea salt
  • 48 mini bars Snickers, unwrapped or 24 regular Snickers cut in half
  • flaky sea salt, optional for sprinkling

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper or silicone baking mats.
  2. In a large bowl, cream together the softened butter, peanut butter, brown sugar, and granulated sugar until light and fluffy (2–3 minutes) using a hand or stand mixer.
  3. Beat in the eggs one at a time, then stir in the vanilla extract until combined.
  4. In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients on low speed until just combined. Avoid overmixing. Chill the dough if it's too sticky.
  6. Scoop about 1 1/2 tablespoons of dough, place a mini Snickers in the center, seal the dough around it, and roll into a smooth ball.
  7. Place 2 inches apart on the prepared baking sheet.
Baking
  1. Bake for 10–13 minutes, or until the edges are set and lightly golden. The centers may look slightly soft but do not overbake.
  2. Remove from oven and sprinkle with flaky sea salt while warm. Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack.

Notes

For a healthier swap, replace half the butter with mashed banana or unsweetened applesauce. To reduce added sugars, use natural peanut butter.
