  • 2 cups all-purpose flour
  • 1.5 cups sugar
  • 1 cup unsalted butter, softened
  • 4 large eggs
  • 1 cup milk
  • 2 teaspoons vanilla extract
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 medium zest of a lemon
  • 1 cup fresh strawberries, diced Use very fresh strawberries to avoid adding extra moisture.
  • Powdered sugar for dusting

Preparation
  1. Preheat the oven to 350°F (175°C). Grease and flour a cake pan.
  2. In a large mixing bowl, cream the butter and sugar together until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition.
  4. Mix in the vanilla extract and lemon zest.
  5. In a separate bowl, combine the flour, baking powder, and salt.
  6. Gradually add the dry ingredients to the wet mixture, alternating with milk until well combined.
  7. Fold in the diced strawberries gently.
  8. Pour the batter into the prepared cake pan and smooth the top.
  9. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  10. Allow to cool before removing from the pan. Dust with powdered sugar before serving.

Notes

Serve slices at room temperature or slightly chilled. This cake pairs well with tea or a scoop of vanilla ice cream. Garnish with extra sliced strawberries or a light lemon glaze if desired.
