Preparation
- Preheat the oven to 350°F (175°C). Grease and flour a cake pan.
- In a large mixing bowl, cream the butter and sugar together until light and fluffy.
- Add the eggs one at a time, beating well after each addition.
- Mix in the vanilla extract and lemon zest.
- In a separate bowl, combine the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, alternating with milk until well combined.
- Fold in the diced strawberries gently.
- Pour the batter into the prepared cake pan and smooth the top.
- Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool before removing from the pan. Dust with powdered sugar before serving.
Notes
Serve slices at room temperature or slightly chilled. This cake pairs well with tea or a scoop of vanilla ice cream. Garnish with extra sliced strawberries or a light lemon glaze if desired.
