Handheld French toast filled with strawberries and cream cheese, these roll-ups are quick to prepare and loved by kids.

Ingredients
  

For the Roll-Ups
  • 8 slices 8 slices sandwich bread (white or milk bread, crusts removed) Crusts removed for easy rolling.
  • 1 cup 1 cup strawberries, thinly sliced Fresh is best when in season.
  • 4 oz 4 oz cream cheese, softened Brings the creaminess.
  • 2 large 2 large eggs For the coating.
  • 1/4 cup 1/4 cup milk Thins the egg mixture.
  • 1/2 tsp 1/2 tsp ground cinnamon Warm spice.
  • 2 tbsp 2 tbsp butter For the skillet.
  • to taste Maple syrup For serving.

Method
 

Preparation
  1. Remove the crusts from the bread and flatten each slice with a rolling pin until about 1/8 inch thick.
  2. Spread cream cheese (about 1 tbsp) on each slice, leaving a small border. Place a few strawberry slices on top.
  3. Roll the slices tightly and press the seam gently so they hold together.
  4. In a bowl, whisk together the eggs, milk, and cinnamon until smooth and slightly frothy.
  5. Dip each roll-up into the egg mixture, turning to coat evenly. Let any excess drip off.
Cooking
  1. Heat butter in a skillet over medium heat until it foams and smells nutty. Add the roll-ups seam side down first.
  2. Cook until golden brown on all sides, turning gently with a spatula — about 2–3 minutes per side.
  3. Serve warm with maple syrup for drizzling.

Notes

Use day-old bread for better results. Keep the skillet at medium heat to avoid burning.
