Method
 

Preparation
  1. Preheat the oven to 425°F (220°C).
  2. Pat the chicken dry and place it in a roasting pan.
  3. Rub the olive oil all over the chicken and season generously with salt and pepper.
  4. Stuff the cavity with minced garlic, lemon halves, and fresh herbs.
  5. Arrange the chopped vegetables around the chicken in the pan.
Cooking
  1. Roast in the oven for about 1.5 hours, or until the internal temperature reaches 165°F (75°C). The skin should be beautifully golden and crispy.
  2. Let the chicken rest for 10-15 minutes before carving.
  3. Serve warm with your favorite sides.

Notes

Use room temperature ingredients for best results. Pre-chopped veggies and pre-marinated chickens can save time. Don’t skip the resting time after roasting.
