Preparation
- Preheat the oven to 425°F (220°C).
- Pat the chicken dry and place it in a roasting pan.
- Rub the olive oil all over the chicken and season generously with salt and pepper.
- Stuff the cavity with minced garlic, lemon halves, and fresh herbs.
- Arrange the chopped vegetables around the chicken in the pan.
Cooking
- Roast in the oven for about 1.5 hours, or until the internal temperature reaches 165°F (75°C). The skin should be beautifully golden and crispy.
- Let the chicken rest for 10-15 minutes before carving.
- Serve warm with your favorite sides.
