Ingredients
  

For the Cake
  • 2 cups all-purpose flour
  • 1 3/4 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 cup milk
  • 1 cup hot water or hot coffee
  • 2 teaspoons vanilla extract
For the Frosting
  • 1 cup unsalted butter (softened)
  • 3/4 cup cocoa powder for frosting
  • 3 1/2 cups powdered sugar
  • 6-8 tablespoons heavy cream or milk
  • 2 teaspoons vanilla extract for frosting
  • a pinch salt for frosting

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Prepare your cake pans by greasing them lightly or lining with parchment paper.
  2. In a large mixing bowl, sift together the all-purpose flour, granulated sugar, unsweetened cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, whisk the eggs, vegetable oil, milk, hot water (or coffee), and vanilla extract until well combined.
  4. Gradually pour the wet ingredients into the dry mixture. Mix on medium speed until smooth. Don't overmix; a few lumps are okay!
Baking
  1. Pour the batter evenly into the prepared cake pans. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  2. Once baked, let the cakes cool in the pans for 10 minutes before transferring to wire racks to cool completely.
Frosting
  1. In a medium bowl, beat the softened butter until creamy. Gradually add cocoa powder, powdered sugar, and a pinch of salt.
  2. Pour in heavy cream and vanilla extract, beating until spreading consistency is reached.
Assembling
  1. Once cooled, place one cake layer on a serving platter, spread a layer of frosting, then stack the second layer on top.
  2. Cover the entire cake with the remaining frosting.
  3. Feel free to add chocolate shavings or sprinkles on top for an extra touch!

Notes

For a more moist cake, replace half of the vegetable oil with applesauce. Add a teaspoon of espresso powder for enhanced chocolate flavor. Consider adding chocolate chips for extra chocolate chunks!
