  • 1 cup Cherry Tomatoes (Halved) Choose the brightest tomatoes.

Preparation

  • Drizzle the chicken breast with olive oil and season with salt, black pepper, and smoked paprika.
  • Grill the chicken over medium heat for 4-5 minutes on each side until fully cooked. Let it rest for a couple of minutes before slicing.
  • Wash and dry the greens. Slice cucumber into thin rounds, halve the cherry tomatoes, and sauté the sweet corn if necessary.

Assembly

  • In a large bowl, pile the greens in the center.
  • Arrange the sliced cucumbers, sweet corn, cherry tomatoes, and grilled chicken around the greens.
  • Add a generous scoop of guacamole in the center, drizzle with olive oil, and sprinkle with salt, pepper, and chili flakes.
