Ingredients
Chocolate Custard Horns:
2 bars, chocolate
1 sheet puff pastry
Egg, beaten
Chocolate Custard:
20 g. sugar
15 g. flour
2 egg yolks
200 c. milk
10 g. unsweetened cocoa
1 bar chocolate
How to make Chocolate Custard Horns
Chocolate Custard Horns:
Step 1: Slice the thawed pastry sheets into half-inch strips.
Step 2: Around the forms, wrap the strips, overlapping while wrapping.
Step 3: Brush the strips with beaten egg wash. Place in the oven and bake at 200 degrees C for 15 minutes.
Step 4: After melting 2 chocolate bars, keep them aside for now.
Step 5: Into the pastry horns, pipe the chocolate custard.
Step 6: Into the melted chocolate, dip one end of the pastry horns. Place on parchment paper to let the melted chocolate harden before serving.
Chocolate Custard:
Step 7: In a bowl, whisk 2 egg yolks with 20 g. sugar until well blended. Then, sift in the flour and unsweetened cocoa. Stir well. Next, slowly add in the milk, mixing every after each addition. Tent the bowl with plastic wrap and heat in the microwave at 60 watts for 2 minutes.
Step 8: While the mixture is still hot, break in the chocolate. Using a wire whisk, mix until the chocolate has melted. Then, heat in the microwave for 2 minutes.
Step 9: Place the mixture in the fridge once cooled enough and let it cool until thick and smooth.
Step 10: Into a piping bag, transfer the mixture.
