Ingredients:
1-inch cubes of half a large chilled seedless watermelon
1 onion, sliced
1 cup thinly sliced basil leaves
1 cup chopped cilantro
½ cup minced mint leaves
2 limes, juiced
1 package of feta cheese (4 ounces)
3 tbsp olive oil
2 tbsp balsamic vinegar
salt and ground black pepper to taste
Instructions:
Gently mix the watermelon, onion, basil, cilantro, mint, lime juice, feta cheese, olive oil, balsamic vinegar, salt, and pepper in a large bowl.
