I love these ham, cheddar, and jalapeno bites. They are a fantastic grab-and-go meal. They also are an excellent option if you are on a diet. Since the pandemic, I have always made sure to serve healthy meals to my family. We indulge in temptation sometimes, but as much as possible, I find ways to make every dish healthy. I already adjusted our meal rotation, and this simple recipe made it to our top favourites. These ham, cheddar, and jalapeno bites are not only delicious but healthy, too!
INGREDIENTS
3 Eggs, beaten
1 1/2 c. chopped ham
1/4 c. jalapeño, seeded and chopped
3 oz. cream cheese softened
1 1/2 c. shredded cheddar
1/2 tsp baking powder
3/4 c. almond flour
INSTRUCTIONS
Step 1: Prepare the oven. Preheat it to 350 degrees F.
Step 2: Mix the chopped ham with cream cheese until well blended.
Step 3: Add the shredded cheese along with the chopped jalapeño, eggs, almond flour, and baking powder. Mix well until you have a thick dough.
Step 4: Place the dough in the fridge to chill for about 15 minutes.
Step 5: To portion the bites out, use a 1-inch cookie scoop. Onto a silicone-lined baking sheet, drop the bites. Place in the preheated oven and bake for about 15 to 18 minutes or until golden brown and completely cooked.
Step 6: Remove from the oven when done and serve immediately. Enjoy!
