I love Olive Garden, and I enjoy most of their food. One of my most favorite is their Chicken Gnocchi Soup. This copycat version is not only as delicious as the original, but this is more budget-friendly. I can also make a large batch because leftovers are amazing, too! Easily pull this Chicken Gnocchi Soup off using ingredients you already have on hand and enjoy a restaurant-quality meal at home without breaking the bank!
Ingredients
1 tbsp olive oil
2 tsp minced garlic
3-4 boneless, skinless chicken breasts – cooked and diced
½ white onion – diced
½ c. shredded carrots
4 c. low sodium chicken broth
2 c. half and half
1 tsp thyme
16 oz. potato gnocchi
1 stalk of celery – chopped
1 c. fresh spinach – roughly chopped
salt and pepper – to taste
How to make Olive Garden Chicken Gnocchi Soup
Step 1: In a large pot, heat the olive oil over medium heat. Once the oil is hot, add the celery, onions, garlic, and carrots to the pot. Cook for about 2 to 3 minutes, stirring often, until the onions are translucent.
Step 2: To the pot, add the chicken. Pour in the chicken broth and season with salt, pepper, and thyme. Bring everything to a boil. Once boiling, gently stir in the gnocchi. Let the soup boil for another 3 to 4 minutes, then decrease the heat and simmer for about 10 minutes.
Step 3: Next, whisk in the half-and-half along with the spinach. Continue to cook for an additional 1 to 2 minutes or until the spinach is wilted. If needed, season with more salt and pepper.
Step 4: Remove from the oven when done and serve the Olive Garden Chicken Gnocchi Soup right away. Enjoy!
