I love this casserole! This has been one of my favorites for years! It is packed with tender chicken, artichokes, and spinach with garlic and melted cheese. Creamy, crazy delicious, and the perfect family and kid-friendly meal! A low-carb option if you are watching the carbs. This dish is a casserole version of my other favorite, spinach artichoke dip. This Spinach Artichoke Chicken Casserole is already a complete meal, but if desired, you can also pair this casserole with salad or veggies and fresh bread. My kids love to dip the bread into the sauce, especially the leftover sauce on their plates!
Ingredients
1 tbsp minced garlic
3 lbs chicken breast about 4 chicken breasts)
½ c. mayo
½ c. sour cream
2 c. Parmesan cheese
1.5 c. mozzarella cheese, shredded
6 oz. artichoke hearts (jarred)
6 oz. cream cheese block
2 c. frozen spinach
How to make Spinach Artichoke Chicken Casserole
Step 1: Prepare the oven. Preheat it to 400 degrees.
Step 2: Allow the cream cheese to soften. In the meantime, slice the chicken breasts into bite-size pieces. Set aside.
Step 3: After draining the artichoke from their juice, dice them and place them in a large bowl along with the cream cheese, sour cream, spinach, Parmesan cheese, garlic, and mayo. Mix well. Add the chicken and mix again, making sure the chicken pieces are completely coated.
Step 4: Using a nonstick spray, grease a casserole dish.
Step 5: Into the prepared pan, pour the mixture, and sprinkle with mozzarella cheese. Place in the preheated oven and bake for about 40 minutes.
